Superfood Granola
I love making my own granola! This recipe is quick, simple and filled with so many superfoods that are rich in vitamins and antioxidants. I sometimes double this batch because I eat it so quickly. Luckily the ingredients are so nutritious that you can feel good about snacking on this all week…if it lasts that long!

Ingredients
- 2.5 cups gluten free oats
- 1 cup chopped pecans
- 1/4 cup chia seeds
- 1/2 cup goji berries
- 1/2 cup raw cacao nibs
- 1/4 cup coconut flakes
- 1 tbsp coconut oil melted
- 2 tbsp pure maple syrup
- 1 dash cinnamon
- 1 dash pure vanilla
Instructions
- Preheat oven to 350 degrees.
- In big bowl combine oats, nuts and chia seeds. Set aside.
- Melt coconut oil and add to oats mixture.
- Add maple syrup, cinnamon and vanilla to oats mixture.
- Spread oats mixture onto baking sheet and bake for 20 minutes (or until oats are golden brown), mixing around half way through.
- Take out of oven and add goji berries.
- Let is cool and then add cacao nibs and coconut flakes.
- Store in airtight container.
