Superfood Granola

I love making my own granola! This recipe is quick, simple and filled with so many superfoods that are rich in vitamins and antioxidants. I sometimes double this batch because I eat it so quickly. Luckily the ingredients are so nutritious that you can feel good about snacking on this all week…if it lasts that long!

Ingredients
  1. 2.5 cups gluten free oats
  2. 1 cup chopped pecans
  3. 1/4 cup chia seeds
  4. 1/2 cup goji berries
  5. 1/2 cup raw cacao nibs
  6. 1/4 cup coconut flakes
  7. 1 tbsp coconut oil melted
  8. 2 tbsp pure maple syrup
  9. 1 dash cinnamon
  10. 1 dash pure vanilla
Instructions
  1. Preheat oven to 350 degrees.
  2. In big bowl combine oats, nuts and chia seeds. Set aside.
  3. Melt coconut oil and add to oats mixture.
  4. Add maple syrup, cinnamon and vanilla to oats mixture.
  5. Spread oats mixture onto baking sheet and bake for 20 minutes (or until oats are golden brown), mixing around half way through.
  6. Take out of oven and add goji berries.
  7. Let is cool and then add cacao nibs and coconut flakes.
  8. Store in airtight container.
