As a busy mom trying to balance full-time parenting and running my business from home, it can often feel like I have zero time to take care of myself. This is why I’m always sharing with you the hacks, time-savers or tricks I have to get in a little me-time here and there.
Since my business is primarily health and fitness focused, nourishing myself from the inside out is a top priority for me. And when it comes to my health, I always focus on these 3 aspects of my life: physical health, mental health and the food I consume.
For physical health, I love my workouts and sharing my quick, effective, at-home exercises with you all. For mental health, I’m big on mediating and try to sneak in at least 5 minutes a day when I can.
But with food, it can often feel challenging and overwhelming to cook nourishing meals when you are strapped for time and exhausted. That’s why meal prepping has always been key for me. By just spending a few hours a week in the kitchen, I can muster up enough food to quickly throw together a lunch or dinner for my fam without really having to think.
When it comes to meal prepping, I always make sure I have my number one pantry staple on hand: Pacific Foods Organic Vegetable Broth. Broth is such a versatile item that can really make a recipe.

So today I am going to share with you 3 easy recipes you can meal prep for the week using Pacific Foods Organic Vegetable Broth.
Slow Cooker Chicken
Ingredients:
- 2 tbsp olive oil for cooking
- 2 large chicken breasts
- 1 clove of garlic minced
- 1/4 cup onion finely chopped
- 1/4 cup Pacific Foods Organic Vegetable Broth
- 1/2 tsp oregano
- 1/4 tsp cumin
- 1/4 tsp paprika
- 1 bay leaf
- salt and pepper to taste
Directions:
In a medium sauce pan heat 1 tbsp of olive oil. Add in garlic and onion and sauté until fragrant. In the slow cooker add 1 tbsp olive oil to the bottom. Add in cooked garlic and onion. Add in broth, chicken and spices. Cook on high for 3-4 hours.
Chunky Vegetable Soup
Ingredients:
- 1 tbsp olive oil for cooking
- 1 clove of garlic minced
- 1 cup roughly chopped onion
- 1/2 cup roughly chopped celery
- 1 cup roughly chopped potato
- 1/2 cup roughly chopped carrots
- 1 can crushed or whole tomatoes
- 1/2 cup green beans
- 1/2 cup peas
- 1 container of Pacific Foods Organic Vegetable Broth
- 1 bay leaf
Directions:
In large stock pot heat olive oil. Add in garlic and onion and sauté until fragrant. Add in celery, potatoes and carrots. Cook until tender (about 5 minutes). Add in tomatoes, broth, green beans, peas and bay leaf. Cover and let it simmer for about 20 minutes,
Quinoa
Ingredients:
- 2 cups Pacific Foods Organic Vegetable Broth
- 1 cup quinoa
Directions:
In a medium pot, add in broth and bring to a boil. Add in quinoa, bring back to a boil and then simmer for 12-15 minutes, until quinoa is cooked and fluffy.
Each of these recipes are super versatile. I love to throw the chicken onto a wrap or salad, make a grain bowl with the quinoa or they could even all be eaten together if you want! Either way, they are quick, nourishing and of course delish!
