So I just committed a major blogger faux pas. I literally JUST finished making this recipe. I took a few crappy photos with no natural light, slapped a filter on and uploaded them…IN REAL TIME. Wait…isn’t that how Instagram used to work?
But truthfully, whenever I look up a recipe online, I always scroll past the beautiful photos anyhow and skip straight to the recipe.
So even though these photos look like sh*t, I promise the recipe is delish. This recipe also makes a lot…so feel free to cut it in half unless you like leftovers or are cooking for a bigger group.
Ingredients:
1 pack soba noodles
1 cup green onion
2 cups broccoli steamed in advance
2 tbsp sesame seeds
4 tbsp coconut aminos
2 tbsp soy sauce
2 tbsp rice wine vinegar
2 tbsp maple syrup
Directions:
Cook noodles according to package (3-4 mins), strain and then rinse with cold water. Set aside. In a small bowl combine coconut aminos, soy sauce, rice wine vinegar and maple syrup. In large skillet heat oil of choice (I prefer avocado oil). Add in 1 cup chopped green onion and broccoli. Cook for 1 minute. Add in sauce mixture and cook for 1 minute. Slowly add in soba noodles and combine with sauce and broccoli. Serve on its own or add in any proteins you have. Top with sesame seeds and raw green onions. We added in some chicken we made yesterday and it was delish! Enjoy!
